350 g
of chicken thighs.
20 g
of potato starch.
50 ml
of soy sauce.
1
lemon (juice).
1 teaspoon
of wasabi.
1 tablespoon
of sesame oil.
2 liters
of vegetable oil for frying.
150 g
00 flour.

of mayonnaise.

procedure

01.

start with the marinade: in a B!POD container, mix the chicken pieces well with soy sauce, lemon juice, wasabi, sesame oil, 1 tablespoon of flour, and 1 tablespoon of potato starch.

02.

create a vacuum at 50 mbar with DRO!D and let it marinate for at least 40 minutes at room temperature.

03.

mix the remaining potato starch and flour in a bowl. in the meantime, heat the oil for frying in a small pot.

04.

remove the chicken from the marinade and coat it thoroughly with the flour and potato starch mix.

05.

carefully place the chicken pieces in the oil and fry on high heat until golden brown.
adjust salt and serve with mayonnaise mixed with finely chopped basil.

06.

tip: you can make homemade basil mayonnaise: blend 1 whole egg and 1 egg yolk with the juice of 1 lemon, 1 teaspoon of white wine vinegar, and 300 ml of vegetable oil poured in a thin stream. when the mixture reaches the right consistency, add finely chopped basil.
