sea bass (cleaned and scaled).

garlic cloves.

sliced lemon.

sliced orange.

bunch of fresh parsley.
300 g
cherry tomatoes.
200 ml
dry white wine.
200 ml
water.
to taste.
extra-virgin olive oil.
to taste.
salt and pepper.

procedure.

01.

start by marinating the fish: place the sea bass in the B!POD container with lemon, orange, garlic, parsley, salt and a drizzle of oil.

02.

create vacuum at 50 millibars and let marinate for 20-30 minutes.

03.

in a baking dish, arrange the cherry tomatoes and marinated fish. add the white wine, water, a drizzle of oil, salt and pepper.

04.

bake in a preheated oven at 180°C for 25-30 minutes, until the fish is well cooked and the cherry tomatoes slightly wilted.

05.

serve the fish with the cherry tomatoes and the aqua pazza sauce, garnished with fresh parsley and grated lemon zest.
