ingredients

ingredients for 4 servings:
200 g
stale tuscan bread (or other rustic bread).
2
ripe tomatoes.
1
cucumber.
1
red onion.
to taste
fresh basil.
50 ml
white wine vinegar.
100 ml
water.
to taste
extra virgin olive oil.
to taste
salt and pepper.

procedure

01.

start by cutting the bread into cubes. if it's very hard, you can soften it slightly by sprinkling it with a bit of water.

02.

place the bread in a bowl with the white wine vinegar and water. mix well so the bread absorbs the liquid.

03.

proceed with vacuum marinating the vegetables: in a bowl, mix the tomatoes, cucumber, red onion, and basil with a pinch of salt, pepper, and a drizzle of extra virgin olive oil.

04.

transfer the vegetables to a container and vacuum with DRO!D. let them marinate for 10–15 minutes.

05.

after that, mix bread and vegetables together in a large bowl. add another drizzle of extra virgin olive oil, adjust salt and pepper, and mix gently.

06.

let the panzanella rest at room temperature for about 10–15 minutes before serving.

storing it in the fridge?

put it in a B!POD container and seal with DRO!D’s low vacuum. it stays fresh for up to 4 days.
