Ideal for high quality still wine with delicate organoleptic characteristics and for longer-lasting freshness (5–7+ days). This mode simulates an almost completely anoxic ambient, similarly to those of professional wineries. Useful with aged wines or easly oxidizable ones such as Pinot Noir, Nebbiolo, and as well with aromatic white wines like Riesling and Gewürztraminer.

Suggested for wine with a daily consumption, almost-full bottles, softer wines, and short storage durations (2–7 days). Less extreme pressure is, in some cases, less invasive in the preservation robust wines’ structure and equilibrium, and/or wines with a rich presence of tannins, such as Cabernet Sauvignon and Shiraz. This mode reduces the risk of extracting aromas which are essential in the equilibrium of the wine.

Kabuto’s valve is patent pending.

The valve does not pass through the device - as it typically happens - to avoid issues with disassembly in the narrow channel and preventing silicone parts from absorbing wine odors or collecting residues.
Instead of a traditional through-hole, a trilobe structure acts as a filter, keeping the valve clean by blocking residue.
The structure not only seals the bottle neck but also wraps around the sides, helping to protect it from airborne bacteria in places like the fridge or pantry.
