procedure

01.

start with marinating the tuna. in a B!POD container, place the avocado, mayonnaise, juice of half a lemon, and sriracha; mash and mix everything until it becomes creamy.

cut the tuna into tartare and transfer it into the container, covering it with the mixture. then, create a vacuum at 50 mbar with DRO!D and let it marinate in the fridge for at least 30-40 minutes.

cut the cooked rice into bars, pressing enough that they hold the shape. sear them in a pan on high heat with a drizzle of sesame oil, until golden brown on all sides and crispy.

garnish the crispy rice rectangles with the marinated tartare mixture, decorate with a bit of sriracha, and chopped chives.

tip: for an easier preparation of the sushi rice bars, you can wet the rice with a mix of 50ml of mirin, 10g of rice vinegar, 10g of sugar, and salt. place everything in a container, pressing the rice well, and leave it in the fridge for at least 40 minutes. it will then be more compact and easier to handle.
